This is an authentic beer brats recipe! I learned this recipe standing in the parking lot of Lambeau Field, getting ready to watch the Packers play Dallas (we won by the way 45 to 17!).

Boiling brats in beer and onions is the best way to give them unique, savory flavor!

Since tailgating season is around the corner I wanted to share my favorite way to make Beer Brat Recipe. Good brats are slow-cooked on the stove and finished on the grill.

If you're going to do some tailgating this year or just enjoy a great dog, this is the recipe for you!

Ingredients

  • brats
  • beer
  • yellow onion
  • garlic
  • beef broth
  • sauerkraut
  • whole grain mustard
  • hotdog buns

Simmer the beer and brats on the stove
  1. This bratwurst recipe is so simple! Add the brats to a deep frying pan or large dutch oven set on medium-high heat. The top with enough beer, beef broth, onion, garlic and water to cover the brats.
  2. Bring to a boil & reduce to simmer. Occasionally turn the brats so they are completely cooked. Simmer for 30-45 minutes until they are completely cooked thru.
  3. Next grill the Beer Brats over an open grill making sure to get good grill marks.

Why boil the meat and then grill it?

Braising them in beer and onions infuses them with flavor and helps keeps them juicy and flavorful! If you just grill the brats when they are raw, often they end up dry and besides, it's tradition!

How long do you soak brats in beer?

You'll want to simmer them at least 30-45 minutes.

Can you soak brats in beer overnight?

You bet! Simmer them, allow to cool and pop them in the refrigerator until you're ready for grilling.

What brats are the best?

Johnsonville Brats - from Sheboygan, Wisconsin are the BEST!! They are first
choice for any tailgater!! Can't get Johnsonville where you live? Then choose raw bratwurst, not pre-cooked hotdogs!

What beer is the best to use?

Leinenkugel is a traditional choice. Beer adds a rich hearty flavor! Other beers to consider are: porter, ale or wheat beer. You can really use your favorite this is tailgating food! No judgement here!!

What is the difference between hotdogs and brats?

  • Though both are sausages, bratwurst are made with fresh beef, pork or veal and mixed with herbs and spice. Hotdogs are precooked.

  • In my opinion, the best brats are Johnsonville Brats made in Sheboygan (sorry another name you can't pronounce!). If you can't find Johnsonville Brats get good bratwurst or German Sausages not hotdogs, because ahem.....there's a difference!

    Top your brats with kraut, whole grain mustard. Use all your favorite toppings!

    Another must try while in Wisconsin - cheese curds? Be sure an give them a try! They are salty, squeaky and so yummy!!

    And one more thing... Wisconsin loves the Green Bay Packers!  Football is a way of life in Wisconsin and I love it too! I lived in the area for about five years and I've been a Packer-Backer ever since!

    Build by starting with a hotdog bun, topped with a brat, sauerkraut and a good whole grain german mustard. That's it....simple and perfect! Football is a way of life in Wisconsin and when it comes to Beer Brats - they do it right!

    The caramelized onions from the dutch oven that have simmered in the beer bath are great topping your dog as well.

    For sides, make a bowl of Deviled Egg Pasta Salad or this Macaroni Salad Recipe. And of course a pot of Tailgate Chili - boy will you have a feast!

    • 1-2 package brats - Johnsonville Brats if you can find them or good German Sausage
    • 2 12 oz bottles of beer
    • 1 yellow onion cut into wedges
    • 2 clove garlic chopped
    • 1 14.5 oz can beef broth
    • 1 can sauerkraut
    • whole grain German Mustard
    • Hotdog buns
    • Additional water as needed to cover the brats

    Recipe backstory

    It was January 30th, 1994 - Super Bowl Sunday.  It was moving day and I was moving from San Clemente, CA to Manitowoc, WI.

    When I stepped on the plane it was 80 in Southern California - when I deplaned in Milwaukee Wisconsin it was 7.  Pretty sure the windchill was -20 below zero. Hence my introduction to Wisconsin!

    Here is what I learned about Wisconsin while I lived there -

    These are hard-working folks.  They won't let a little thing like a snowstorm stop them from coming to work.  AND they won't be late either, they will get up, dig out their driveway and car and go to work.Snow is a way of life - deal with it!

    Fridays are for Fish Fries and Fish Boils.  Every supper club has a Fish Fry on Friday nights and if you are really lucky you get invited to a fish boil (ewe!!!).

    Admittedly I thought a "fish boil" sounded awful until I tried it. Fish boils are amazing. Lake Trout boiled with corn, onions, potatoes and seasoning. It involves a big fire, super cool and loads of fun. If you EVER get an invite - go!

    These are the cities I lived in while I was in Wisconsin.

    In the five years I was in Wisconsin I lived in Manitowoc, Mishicot and Ashwaubenon and worked in Green Bay.
